Veganuary - Minimalist Baker and Vegan Chili Recipe

Vegan Chilli

1 Red Onion

1 Courgette

1 Red Bell Pepper

1 Stick of Celery

Handful of frozen peas

Handful of frozen (or tinned) sweetcorn

1 tsp Lazy Chillies

1 tsp Lazy Garlic

½ tsp Paprika

½ tsp Garlic Pepper

½ tsp Celery Salt

½ tsp Turmeric

1 Can Chili Beans in Chilli Sauce

1 Jar Tomato Pasta Sauce or Pasata (depending on preference)

Lime Juice

Maggi Seasoning

Frozen Meat Free Mince

Fresh Coriander

Chop vegetables, removing spongy middle from the courgette and place them in a pan with Olive Oil and fry for about 3 minutes along with the spices, garlic and chilli. Add the frozen peas and sweetcorn and continue to fry. Soften the chilli beans in the microwave for 3 mins before adding to the pan along with lime juice and Maggi seasoning (to taste). Add the mince and cook for a further 5 mins until the mince has cooked through, then add the jar of sauce or Pasata, cook for a further 2 minutes. Before serving, sprinkle with fresh coriander to taste.
